What is Cacao Butter?

To make the butter, cacao beans are cold pressed to extract the oil — similar to olives and olive oil. Instead of olive oil, however, you get theobroma oil. At room temperature, this oil solidifies just like coconut oil. But when it’s applied to your skin, cacao butter melts like a lotion and is quickly absorbed into your pores for instant moisturizing. But you can also eat cacao butter to reap its many health benefits.

It’s commonly used to make chocolate — it’s the fatty emulsifier that blends cacao nibs, milk solids, and sugar together — and what gives chocolate that melt-in-your-mouth, silky quality. While cocoa butter does have hints of chocolate flavor, the texture is more like coconut butter and coconut oil combined.

Monkfruit, also known as lo han guo or Swingle fruit (Siraitia grosvenorii), is a small round fruit native to southern China. It has been used for centuries in Eastern medicine as a cold and digestive aid, and now it is also being used to sweeten foods and beverages. Monkfruit sweeteners are created by removing the seeds and skin of the fruit, crushing the fruit, and collecting the juice. Monkfruit is extremely sweet making it hard to measure and pour, only very small amounts of monk fruit sweeteners are needed to achieve the sweetness of sugar. The juice of the monk fruit is up to 200 times sweeter than cane sugar! To make measuring and pouring easier, they are typically blended with common approved food ingredients. The Granary has wild sockeye pacific salmon from the Stikine River in northern British Columbia. This salmon is a vibrant pink colour and is lower in fat than its farmed Atlantic cousin. Our individually portioned fillets are sold per 100g. The average fillet ranges from approximately 150-300 g.

This salmon is very lean and is therefore easy to overcook. For a great dinner recipe try this Salmon with Black Rice and Carrot Miso sauce

Benefits of Wild Caught Salmon

The benefits of eating salmon are great, the benefits of choosing sustainably caught salmon from the wild are even greater. Salmon is a super healthy source of protein, rich in Omega 3 fatty acids and full of natural antioxidants. It is a nearly unrivaled food source of bone-saving, cancer curbing vitamin D with a whopping 1100 IU per 6 oz serving. Wild salmon is higher in nutritional value and lower in fat. It is antibiotic and hormone free, and has a less “fishy” flavour, making it great for kids. Salmon is great for most diets including low carb, gluten free, paleo and keto.

This fish comes from a small family run operation in northwestern BC. It is the only fish plant on the Stikine RIver and is federally licensed and certified.
