The type of flour you use determines the texture, structure, and outcome of everything you make. It is not just a preference. It is science.

Hard flour comes from hard wheat varieties and has a high protein content, typically 12 to 14 percent. That protein creates strong gluten development, which gives bread its chew, its rise, and its structure. Think sourdough, bagels, pizza dough, pasta.

Soft flour comes from soft wheat and has a much lower protein content, around 8 to 10 percent. Less gluten means a more tender, delicate crumb. Think cakes, muffins, biscuits, pastries.
